Shortbread Day is observed on January 6. Shortbread is Scottish, contains three ingredients, and is harder to make well than that suggests.

Origin and background

It descends from medieval biscuit bread, which was leftover bread dough dried out in a low oven into a hard rusk and sometimes sweetened. As butter progressively replaced the yeast, the thing stopped being bread in any meaningful sense and became what we have now. Tradition credits Mary, Queen of Scots with refining it in the sixteenth century, which is a long-standing attribution rather than a documented fact.

The formula is worth committing to memory, because it is the whole recipe: one part sugar, two parts butter, three parts flour, by weight. Everything else is shaping.

The name explains the texture and a good deal of baking vocabulary besides. Fat coats flour proteins and physically blocks them from linking into gluten, so the dough never develops the stretchy network that makes bread chewy. Without it the baked result fractures rather than bends. That property is called shortness, which is why shortcrust pastry is short, and why solid baking fat is called shortening. Shortbread is the most concentrated demonstration of the principle, which is why overworking the dough ruins it: handling develops exactly what the butter is there to prevent.

Many traditional recipes replace a portion of the flour with rice flour or cornstarch, which has even less protein available and produces the faintly sandy bite that good shortbread has.

The January placement fits the Scottish calendar. Shortbread is closely tied to Hogmanay, and is one of the things a first-footer traditionally carries across the threshold at New Year.

  • Weigh the ingredients at one, two and three parts and skip the recipe.
  • Handle the dough as little as possible, and stop mixing the moment it comes together.
  • Chill it before baking so the butter is firm going into the oven.
  • Bake it pale. Shortbread should be barely colored at the edges, not golden.
  • Prick the surface and cut it while still warm, since it shatters once cool.
