Origin and background

The origin of the observance is not documented. The dessert is credited to Auguste Escoffier, the chef who systematized French professional cooking, and is generally dated to the 1860s. The name comes from La belle Helene, an Offenbach operetta that was a considerable hit in Paris at the time, and naming dishes after popular performances and performers was standard practice in that era.

The classical version is specific: pears poached in vanilla syrup, cooled, served on vanilla ice cream with a chocolate sauce, and finished with crystallized violets or toasted almonds. The violets have largely disappeared from modern renditions.

Pears suit poaching better than most fruit because their flesh is firm and slightly grainy when raw and turns silky and translucent in syrup without collapsing. Varieties matter here: firm pears such as Bosc or Conference hold shape, while a ripe Comice will disintegrate.

How to take part

  • Use slightly underripe pears. A perfectly ripe pear is a poor candidate for poaching.
