Origin and background

Start with the plant, which does something almost no other crop does. The peanut is a legume, and it flowers above ground in the ordinary way. Once a flower is fertilized, the stalk beneath it elongates downward and drives the developing ovary into the soil, where the pod matures underground in darkness. That structure is called a peg, and the behavior, fruiting below ground, is rare enough to have its own term. A peanut is therefore not a nut and not a root; it is a pod that buried itself.

Being a legume, it also fixes nitrogen through root bacteria, which is why it works well in rotation with crops that deplete it.

The confection illustrates a distinction worth knowing at the shop. Real chocolate sets properly only if tempered, and untempered chocolate dries dull, soft and streaky. Compound coating, sold as candy melts or chocolate coating, replaces cocoa butter with a vegetable fat that crystallizes in only one form, so it sets hard and glossy with no tempering at all. It is technically not chocolate and tastes noticeably waxier, and it is why homemade clusters so often look better than they taste, or taste better than they look, depending on which the cook reached for.

Clusters are forgiving either way, because an irregular lumpy shape hides the surface flaws a molded bar would expose.
