Origin and background
Whipping cream is a piece of structural engineering. Beating drives air into the liquid as bubbles, and the cream's fat globules, knocked about by the whisk, lose part of their protective membranes and begin sticking to one another around those bubbles. The result is a scaffold of partly joined fat holding air in place. The foam is the structure, not the air.
That explains the requirements. Cream needs roughly thirty percent of its weight in fat to build a stable network, which is why heavy cream whips and milk simply froths and collapses. The fat also has to be partly solid to hold the shape, so cold cream in a cold bowl whips well and warm cream refuses, which is the usual reason it fails.
Push it too far and the fat network keeps joining up until it separates from the liquid entirely, at which point you have butter and buttermilk. This is recoverable if caught early, by folding in a splash of fresh cold cream by hand.
Aerosol cream works differently, using nitrous oxide, which dissolves readily in fat under pressure and expands on release. It collapses quickly because nothing holds the structure once the gas escapes.
The dish is old. Sixteenth-century European recipes describe beating cream with bundled twigs and skimming off the froth, sometimes called snow. The association with Chantilly came much later, and the story attributing it to a particular French chef is tradition rather than documented fact.
One honest note, since it is often claimed otherwise: whipped cream is about a third fat, and while it does contain some calcium and protein, that is not a reason to treat it as anything but a pleasure.
How to take part
- Chill the bowl and the whisk as well as the cream.
- Stop at soft peaks that just hold their shape. Most cream is beaten too far.
- Add sugar near the end rather than at the start.
- If it splits, fold in a little fresh cream by hand to bring it back.
- Whip it by hand once, which takes a few minutes and makes the stages obvious.
