After pollination the pods are cured over months through repeated sweating and drying, which is where the aroma develops. Madagascar now dominates production, and vanilla prices have swung violently over the past decade with cyclones and speculation.

In ice cream, vanilla is also a technical choice. It is the base that shows every flaw: no chocolate or fruit to mask a grainy texture, an over-churned body or a cheap fat. That is exactly why it is the flavor used to judge a maker.
