Strawberry Ice Cream Day is observed on January 15. It is the third member of the neapolitan trio and the one that most often disappoints.

Origin and background

There is a real technical reason strawberry ice cream is harder than vanilla or chocolate. Strawberries are around ninety percent water, and water freezes into crystals. Folding a lot of fresh fruit into a custard base introduces a great deal of free water that turns icy and grainy, and the pieces themselves freeze into hard chips. Vanilla and chocolate add flavor without adding much water, which is why they are forgiving.

The fixes all address the water. Cooking the fruit down concentrates it and drives some off. Macerating with sugar draws water out of the cells by osmosis so it ends up in the syrup rather than the berry. Sugar and alcohol both lower the freezing point, keeping what water remains from setting hard. Commercial producers reach for stabilizers that bind free water so it cannot crystallize, which is what they are actually for.

Flavor is the second problem. The aroma compounds that make a strawberry smell like a strawberry are volatile and fragile, and both cooking and freezing blunt them. Cold also suppresses perceived sweetness and aroma generally, which is why ice cream bases taste cloying at room temperature and correct once frozen. An underseasoned strawberry base will simply taste of pink.

The neapolitan grouping itself comes from Italian immigrant confectioners in the United States, who arranged three flavors in one block, reportedly echoing the colors of the Italian flag.

How to take part

• Macerate the fruit in sugar first and use the syrup as well as the berries.
• Cook some of the fruit down and leave some raw, for depth and brightness together.
• Add a spoonful of lemon juice, which sharpens flavor that freezing dulls.
• Taste the base before churning and let it seem slightly too sweet.
• Use frozen strawberries in January. They were picked ripe, which winter fresh ones were not.
