Origin and background

The distinction is preservation. Compote is cooked briefly, keeps the fruit in recognizable pieces, and does not keep: it is a dish, eaten within days and refrigerated. Jam is boiled hard to drive off water and concentrate sugar to the point where microbes cannot grow, which is why it survives a year in a cupboard. Same fruit, same pan, different destination, decided almost entirely by how long the heat is applied.

That makes compote the more forgiving preparation. There is no setting point to hit, no pectin to worry about and no sterilization to get right, and the fruit keeps its shape and flavor rather than being cooked into uniformity. Gentle heat and a modest amount of sugar are the whole method.

The name comes through French from a Latin root meaning put together, and the dish has a long history as a way of using fruit that was ripe all at once, which is the situation every fruit tree creates.

Two technique points decide the result. Sugar draws water out of fruit by osmosis, so macerating the fruit with sugar for half an hour before heating produces syrup from the fruit's own juice rather than from added water, which concentrates rather than dilutes the flavor. And acid matters more than people expect: a squeeze of lemon sharpens the fruit, helps it hold its color, and stops a sweet compote tasting flat.

It works particularly well with fruit that is slightly underripe or bruised, which is the fruit nobody wants to eat raw.

How to take part

• Macerate the fruit in sugar first and let it make its own syrup.
• Cook it briefly. Compote should still be fruit, not sauce.
• Add lemon juice at the end to lift it.
• Use frozen fruit in March, which is picked ripe and costs little.
• Remember it does not keep. Refrigerate and eat within a few days.
