Origin and background
Food had been frozen for centuries before it was any good. The problem was speed. Slow freezing gives water molecules time to gather into large ice crystals, and those crystals puncture cell walls, so the food collapses into something mushy and weeping on thawing. This is why early frozen produce had such a poor reputation.
The insight came from the Arctic. Clarence Birdseye, working as a naturalist in Labrador in the 1910s, watched Inuit fishermen pulling fish from holes in the ice into air far below freezing, where the catch froze almost instantly and, months later, tasted fresh. He worked out that the rate was the variable, and spent years developing equipment to freeze food quickly under industrial conditions. Flash freezing produces crystals small enough to leave cell structure largely intact.
Freezing does not sterilize. Microorganisms are suspended rather than destroyed and resume activity on thawing, which is why thawing at room temperature is a genuine food safety problem and thawing in a refrigerator is not.
One consequence surprises people: frozen vegetables are frequently more nutritious than fresh. Produce destined for freezing is picked ripe and processed within hours, while fresh produce may spend a week or more in transit and storage losing vitamins. Several studies comparing the two find frozen equal or better on key nutrients.
Freezer burn is not spoilage but dehydration. Ice sublimates directly to vapor in dry freezer air, leaving the surface leathery and discolored, which is why airtight wrapping matters.
How to take part
- Thaw in the refrigerator, never on the counter.
- Freeze in thin flat packages, which freeze and thaw faster and better.
- Buy frozen vegetables without embarrassment, especially out of season.
- Wrap tightly and exclude air to prevent freezer burn.
- Label with the date. Quality declines long before safety does.
