Origin and background

The origin of the observance is not documented, and the obvious question is why the shape should matter at all. It does, for reasons beyond display.

Curving the rack outward exposes the fat cap on the outside of the ring to direct heat while the lean eye of the meat sits protected on the inside, so the exterior renders and browns while the interior stays moist. The bones conduct heat poorly and shield the meat behind them, and standing them upright keeps them out of the pan rather than insulating the base. The hollow center then provides somewhere for stuffing, which cooks in the drippings.

That center is also where it goes wrong. Stuffing packed in from the start absorbs heat and slows the middle of the joint, and it must itself reach a safe temperature, which usually means overcooking the pork around it. Most butchers now advise roasting the crown empty and filling it at the end, or cooking the stuffing separately and using the cavity to serve it.

The bigger change is in the meat itself. Pork sold today is far leaner than it was decades ago, and the old advice to cook it until white and dry belongs to an era of parasite risk that modern farming has effectively removed. Guidance in the United States was revised in 2011 to a lower finished temperature with a rest, which leaves pork faintly pink and vastly better to eat.

A meat thermometer matters more here than in almost any other roast, because the joint is expensive and irregular in shape.
