Origin and background

Carrots are among the sweetest vegetables available in a temperate climate, and for most of European history refined sugar was expensive and often scarce. Medieval and early modern cooks used carrots in sweet puddings as a matter of course, because they supplied sweetness, moisture and bulk at a fraction of the cost. Carrot puddings appear in English recipe collections long before anything resembling the modern cake.

The dish returned under rationing. Wartime Britain faced severe sugar restrictions and a deliberate government campaign promoting carrots, which were plentiful and unrationed, and carrot-based sweets and cakes were pushed hard in official recipe leaflets. The version most people now recognize, heavily spiced and finished with cream cheese frosting, is an American development that became popular in the 1960s and 1970s.

The baking behaves in specific ways worth knowing. Grated carrot is mostly water, and that water is released slowly during baking, which is why carrot cake stays moist for days when a plain sponge dries out overnight. It also means the cake is wet-batter heavy, so it suits oil rather than creamed butter and tolerates a low, slow bake.

Grating matters more than people expect. Coarse shreds stay visible and slightly fibrous in the finished crumb, while fine grating disappears entirely and gives a smoother texture, which is the difference between the rustic and the bakery versions.
