Banana Bread Day
What the day is
Banana Bread Day is observed on February 23. The bread is a quick bread: leavened with baking soda or powder rather than yeast, mixed in one bowl, and baked in a loaf tin.
Its defining feature is that it improves as its main ingredient deteriorates. Bananas too soft and spotted to eat are exactly what the recipe wants, because starch converts to sugar as they ripen and the fruit mashes into the batter instead of sitting in lumps.
Origin and background
The origin of the observance is not documented.
The bread itself is American and became widespread in the 1930s. Two things converged: chemical leaveners had become reliable and cheap, with manufacturers promoting them heavily through recipe booklets, and the Depression made throwing away food unthinkable. A recipe that turned spoiling fruit into a cake-like loaf suited the moment precisely, and it appeared in a great many cookbooks of the period.
Bananas were available to make it with because the fruit had become a cheap year-round import by then, which is itself a story about refrigerated shipping and Central American plantation agriculture.
It had a second surge in 2020, when home baking spiked during lockdowns and banana bread became the emblem of it, largely for the same reason as the first time: it uses what is already in the house.
How to take part
- Wait for the bananas. Yellow ones make a bland loaf; you want them heavily spotted or black.
- Freeze them as they turn. Peel, bag and freeze; thawed bananas release liquid and mash to a puree with no effort.
- Do not overmix. Stir until the flour just disappears. Quick breads turn tough and tunnel when beaten.
- Use more banana than the recipe says, within reason, and slightly less sugar. Most published recipes are sweeter than they need to be.
- Tent with foil if the top browns before the middle sets, which happens in most home ovens.
- Cool it fully before slicing. Warm banana bread tears.
It freezes well sliced, and toasted slices with butter are arguably better than the fresh loaf.
